Ada Recipe - Rice Flakes

Ingredients

Makes: 1 kg

1 kg sifted rice flour (sift through a fine meshed sieve and use only the finest flour)

100 gms unsalted butter

1/2 tsp salt

25 large banana leaves

 

Method of Preparation

  • Mix rice flour and butter. Add salt and 2 cups water to make a smooth, thick paste. Add a little more water if the mixture is too thick.
  • Clean banana leaves with a damp cloth on both sides, dry and pass over a live flame to make them pliable, cut into suitable sized pieces.
  • Spread paste evenly and thinly on banana leaves.
  • Roll leaves (like a swiss roll), fold them in at both ends and tie with cotton string to secure.
  • Bring plenty of water to boil in a wide pan, immerse colls in water and boil for 10 minutes.
  • Remove rolls from pan and drain.
  • Open leaves and prise away the semi cooked rice paste (ada), with a knife. cut into very small flakes, about 1/2 cm in size.
  • Rinse ada in cold water, spread on a tray and keep in the sun, covered with a thin muslin cloth, till crisp.
  • Store in airtight containers and use as required.
