Ellum Sharkarayum Chertha Aval Unda - Parched Rice Sweet with Sesame Seeds
Ingredients of Ellum Sharkarayum Chertha Aval Unda
Serves: 8
1 tsp + 1 tsp ghee
250 gms parched rice
100 gms white sesame seeds
Syrup made from 250 gms jaggery
½ medium-sized, fresh coconut, grated
3 tsp lime juice
Method of Preparation of Ellum Sharkarayum Chertha Aval Unda
- Heat 1 tsp ghee in a frying pan and sauté rice for 10 minutes. Remove from pan and set aside.
- Add remaining ghee to pan, heat through and fry sesame seeds for 10 minutes, stirring frequently. Set aside.
- Place jaggery syrup in a pan over moderate heat. Add coconut and lime juice, and cook till it thickens.
- Remove from heat and add rice and half the sesame seeds. Mix well, allow to cool and shape into lime-sized balls.
- Spread remaining sesame seeds on a plate. Roll rice balls on the plate coating them with sesame seeds.
- Store in an airtight container.
