Eruvum Madhuravum Ulla Chemmeen Varathathu - Sweet and Spicy Prawn fry

Ingredients of Eruvum Madhuravum Ulla Chemmeen Varathathu

Serves: 4

A Christian dish.

250 gms medium-sized prawns or large prawns

1 ½ tbsp + 1 ½ tbsp oil

2 medium-sized onions, chopped

2 medium-sized tomatoes, chopped

3-cm piece ginger, chopped

2 tsp white vinegar

1 tsp salt

1 tsp sugar

Ground to a fine paste:

10 dry red chillies, seeded

6 cloves garlic, chopped

4 tsp water

Method of Preparation of Eruvum Madhuravum Ulla Chemmeen Varathathu

  • Shell prawns, remove heads, devein and wash.
  • Heat 1 ½ tbsp oil in a pan, add onions and tomatoes mix well, remove from pan and set aside.
  • Pour remaining oil into pan and heat through. Add prawns, ginger, vinegar, turmeric and salt, and cook for 5 minutes.
  • Reduce heat, add chilli-garlic paste and fry for 2 minutes.
  • Add reserved onions and tomatoes, and fry till onions turn translucent.
  • Stir in sugar, mix well and remove from heat.
