Idichakka Thoran - Stir-fried Tender Jackfruit with Coconut
Ingredients
Serves:8
500gms tender jackfruit
1 tsp salt
2 tbsp coconut oil
1 tsp mustard seeds
2 shallots,chopped
1 stalk curry leaves
Ground to a coarse paste:
1 medium-sized,fresh coconut,grated
3 shallots,chopped
10 dry red chillies,torn into pieces
1/2 tsp turmeric powder
A pinch of cumin seeds
Method of Preparation
Remove outer part of jackfruit and inner fibres,and cut fruit in to large pieces along with any unripe seeds.
Place in a pressure cooker with salt and 3/4 cup water and cook under pressure for 10 minutes.
Remove from heat,allow to cool and mash well.
Heat oil in a pan and sprinkle in mustard seedsWhen they start sputtering,add shallots and curry leaves,and fry till shallots turn brown.
Add coconut paste and jackfruit,and stir-fry till dry.
Variation:Vazhuthananga Thoran (Stir-fried Aubergine with Coconut):Use 250gms aubergine (baingan) instead of jackfruit.Slice and soak in water with 1 tsp salt for 20 minutes.Drain,rinse and dry.Add to pan with coconut paste and 1 tsp salt,and stir-fry till dry.
