Injithairu - Curd and Ginger Chutney

Ingredients of Injithairu

Makes : ¾ cup

5-cm piece ginger, ground

2 green chillies, ground

2 tbsp grated coconut, ground with 4 tbsp water

1 tsp salt

½ cup curd (not sour), whisked

Tempering:

2 tsp oil

½ tsp mustard seeds

¼ tsp cumin seeds

1 stalk curry leaves

Method of Preparation of Injithairu

  • Mix together ginger, chillies, coconut, salt, curd and 2 tbsp water in a bowl.
  • Heat oil for tempering in a small pan and sprinkle in mustard seeds. When they start sputtering , add cumin and curry leaves. Fry for a moment and pour contents of pan into bowl.
  • Mix well and serve.
