Irachi Achar - Meat Pickle

Ingredients

Makes: 500gms

500gms boneless meat

1 cup sesame seed oil (til ka tael)

6 green chillies,chopped

12 cloves garlic,chopped

4-cm piece ginger,chopped

2 stalks curry leaves

1 1/2 tbsp white vinegar

1 1/2 tsp salt

Marinade:

3 tsp red chilli powder

1 tsp turmeric powder

1 1/2 tsp salt

Ground to be a fine paste:

12 cloves garlic,chopped

4-cm piece ginger,chopped

3 tsp red chilli powder

1 tsp turmeric powder

1 tsp black pepper powder

1 tsp asafoetida powder (hing)

Method of Preparation

  • Wash meat,pat dry and cut into 2-cm pieces.
  • Combine ingredients for marinade,rub into meat and marinate for 30 minutes.
  • Heat oil in a kadhai and deep fry meat till tender.Remove from oil,drain and set aside.
  • Add green chillies,garlic,ginger and curry leaves to kadhai and fry for 5 minutes,stirring constantly.
  • Mix in vinegar,salt,meat and ground spices,and remove from heat.
  • Cool,bottle and store in the refrigerator.
