Irachi Varatiathu - Meat Cooked with Chopped Coconut

Ingredients

Serves: 6

A Chiristian dish

1kg mutton or beef

7 shallots,chopped

3-cm piece ginger,chopped

1 stalk curry leaves

1/4 fresh coconut,finely chopped

2 tsp white vinegar

1 tsp salt

Ground to a fine paste:

3 shallots,chopped

2 tsp red chilli powder

2 tsp coriander powder

1/2 tsp turmeric powder

1/2 tsp black pepper powder

A pinch of cumin seeds

A pinch of fennel seeds (badi saunf)

1 white cardamom,peeled

5-cm stick cinnamon,broken into pieces

3 cloves

4 tsp water

Tempering:

4 tbsp oil

1 tsp mustard seeds

1 medium-sized onion,chopped

1 stalk curry leaves

Method of Preparation

  • Wash meat,drain and cut into 3-cm pieces
  • Place in a pressure cooker with 3/4 cup water and all ingredients,except tempering.Cook under pressure for 30 minutes.
  • Open cooker,simmer till gravy is nearly dry and remove from heat.
  • Heat oil for tempering in a small pan and sprinkle in mustard seeds.When they start sputtering,add onion and curry leaves,and fry till onion turns translucent.
  • Pour contents of pan into curry,mix well and serve with rice,pathiri or porotta.
