Wash and scrub mussels well.With a sharp knife,scrape off the poisonous beards and filaments at the joints of the shell.Wash again.Prise open shells with the edge of a knife.Rinse in fresh water and drain.
Combine ingredients for marinade,mix in mussels and marinate for 30 minutes.
Heat oil in a kadhai and deep fry mussels till golden brown.Remove from oil,drain and set aside.
Sprinkle mustard seeds into oil.When they start sputtering,add green chillies,garlic and ginger,and fry for 5 minutes.Add spice paste and fry for a minute more,stirring constantly.
Mix in mussels,remove from heat and cool.
Store in an airtight jar in the refrigerator.
Note:Discard any mussels that are not tightly shut.
