Kaya Varuthathu - Plantain Chips

Ingredients

Makes: 500 gms

Plantain chips are usually cut into thin rounds.

Besides this well-known variety,the plantain can also be cut into half centimetre thick slices which are then quartered and fried.Both types are served at feasts.

1 kg unripe plantains

1/2 tsp turmeric powder

2 tsp salt

2 1/2 cups oil

Method of Preparation

  • Peel plantains and cut into thin round slices.
  • Heat oil in a kadhai and sprinkle in turmeric and salt.
  • Fry chips in batches till golden and crisp.
  • Remove from oil,drain,cool and store in an airtight container.
  • Variation: Chena Upperi (Elephant Foot Yam Chips): Cut yam into 1-cm cubes.Do not add turmeric and salt to oil before frying.Halfway through frying,sprinkle in a few drops of salt solution made with 2 tsp salt dissolved in 4tbsp water.Cool and serve immediately.In this case coconut oil enhances the flavour.These chips are also served at feasts.
