Koonthal Varatiathu - Stir-fried Squid

Ingredients

Serves: 4

A Muslim dish.

250 gms squid

2 tbsp oil

2 green chillies,slit

1 tsp salt

Ground to a coarse paste:

2 cloves garlic,chopped

2 tsp fennel seeds (badi saunf)

2 tsp red chilli powder

1/2 tsp turmeric powder

Method of Preparation

  • Remove outer skin of squid,clean,wash thoroughly and cut into 3-cm pieces.
  • Mix ground spices with 4 tbsp water.
  • Heat oil in a pan over low heat and add squid,green chillies and spice paste.Mix well and cook,stirring occasionally,till water evaporates.
  • Mix in salt and when completely dry,remove from heat.
