Kozhukkatta - Savoury Rice Dumplings with Coconut

Ingredients

Serves: 12

1 kg parboiled rice

2 medium-sized,fresh coconuts,grated

1 tsp salt

Method of Preparation

  • Wash rice and soak in water for 3 hours.Drain and grind with 1 1/2 cups water to a thick paste.
  • Grind coconut with salt coarsely.Add to rice paste and mix well.
  • Pinch off orange-sized portions of rice paste and shape into round dumplings.
  • Boil 5 litres of water in a pan and drop dumplings into the boiling water.Cook for 15 minutes,remove from water and drain well.
  • The dumplings can also be placed on banana leaves and steamed for 10 minutes.
