Meen Pollichathu - Fish in Banana Leaves

Ingredients

Serves: 4

A Christian dish

2 large banana leaves

500 gms whole fish (pearl spot/pomfret)

1 cup oil

2 medium-sized onions,chopped

4 green chillies,chopped

5-cm piece ginger,chopped

8 cloves garlic,chopped

A walnut-sized ball of seedless tamarind soaked in 5 tbsp water

1/2 tsp turmeric powder

3 tsp red chilli powder

Marinade:

Juice of 2 lines

1/2 tsp turmeric powder

1 tsp salt

Method of Preparation

  • Clean banana leaves with a damp cloth on both sides,dry and pass over a live flame to make them pliable.Cut into pieces large enough to wrap a whole fish.
  • Clean fish,keep whole,wash and drain thoroughly.
  • Combine ingredients for marinade,rub into fish and marinate for 20 minutes.
  • Heat oil in a frying pan and deep fry fish for about 5 minutes in each side.Remove fish from pan,drain and set aside.
  • Reduce oil to 2 tbsp and add onions,green chillies,ginger and garlic,and fry till onions turn translucent.
  • Extract tamarind pulp and strain in.Sprinkle in spice powders and boil till mixture thickens.
  • Coat fish with mixture and stuff with remaining mixture.Wrap fish in banana leaves,using toothpicks to secure the parcels.
  • Roast on a hot tava or griddle on each side for 2-5 minutes or place in a steamer for 2-5 minutes,till banana leaves turns blackish-brown.
