Muringayila Kari - Drumstick Leaf Curry

Ingredients

Serves: 4

Dishe made with leaves of drumsticks,ashgourd,colocasia,cowpeas,red pumpkin,etc.,play a prominent role in household menus after the fury of the monsoon subsides.They are chosen for their taste and medicinal values.This recipe is from the Muslim community.

100 gms drumstick leaves

2 tbsp oil

1 tsp mustard seeds

1 stalk curry leaves

1/2 tsp red chilli powder

1/2 tsp turmeric powder

1/2 tsp salt

Ground to a fine paste:

1/2 medium-sized,fresh coconut,grated 3 shallots ,chopped A pinch of cumin seeds 3/4 cup water.

Method of Preparation

  • Clean and wash drumstick leaves,and drain well.
  • Heat oil in a pan and sprinkle in mustard seeds.When they start spurttering,add curry leaves and spice powders,and fry over low heat for 30 seconds,stirring constantly.
  • Add salt and drumstick leaves,and fry over moderate heat for 10 minutes,stirring occasionally.
  • Mixx in coconut paste and 3/4 cup water,and bring to boil.Remove from heat immediately and serve with rice or pathiri.
