Muttakoos Thoran - Stir-fried Cabbage with Coconut
Ingredients of Muttakoos Thoran
Serves: 8
In a thoran,vegetables are always cut small and cooked with grated,ground or chopped coconut.
250 gms cabbage
2 tbsp coconut oil
1 tsp mustard seeds
1 medium-sized onion,chopped
6 green chillies,slit
1 stalk curry leaves
1 tsp salt
1/2 medium-sized,fresh coconut,grated
Method of Preparation of Muttakoos Thoran
Chop cabbage very fine.
Heat oil in a pan and sprinkle in mustard seeds.When they start sputtering,add onion,green chillies and curry leaves,and fry till onions turns translucent.
Mix in cabbage and salt.Press down with a spatula,cover pan and cook for 5 minutes over low heat.
Open pan,add coconut and stir-fry till completely dry.
Variations:Bittergourd,carrot,capsicum or okra (bhindi) can be used instead of cabbage.Add 2 chopped petals of cambodge with bittergourd.
