Ingredients of Nadan Mathi Kari

Serves: 6

25 sardines

4 green chillies,slit

3 petals cambodge,torn into pieces and soaked in 1 cup water

1 tsp salt

1/2 tbsp + 1 tbsp oil

1 stalk curry leaves

Ground to a fine paste:

10 dry red chillies,torn into pieces

1 tsp coriander seeds

8 shallots,chopped

1 stalk curry leaves

1/4 cup water

Method of Preparation of Nadan Mathi Kari

  • Clean sardines,remove heads,cut into 5-cm pieces and wash.
  • Combine sardines,green chillies,cambodge with its soaking liquid,salt,1/2 tbsp oil and spice paste in a pan.Mix well and cook over low heat till fish is tender and gravy thickens.
  • Stir in remaining oil and curry leaves,and remove from heat.
  • Serve with rice or kappa puzhukku.
