Naranga Kari – Lime Pickle
Ingredients of Naranga Kari
Makes: 1 kg
25 thin-skinned limes
10 green chillies, chopped
3-cm piece ginger, chopped
4 tsp salt
3 ½ tbsp sesame seed oil (til ka tael)
6 tsp red chilli powder
Method of Preparation of Naranga Kari
- Wash limes, dry thoroughly and cut into 8 pieces each.
- Mix limes, green chillies, ginger and salt, and keep in an airtight jar in direct sunlight for 3 days.
- Heat oil in a small pan till smoking. Cool and mix in chilli powder.
- Pour contents of pan over limes and mix well.
- Bottle and use after 7 days.
