Nellika Kari - Amla Pickle

Ingredients

Makes: 1 1/4kg

Nellika (in Malayalam) or amla (in Hindi) is the emblic gooseberry,also called the Indian hog plum.Its botanical name is Emblica officinalis.

A well-made amla pickle is highly prized by Malayali gourmets since it is a difficult achievement given the sour-sweet taste of the berry.

1 kg amla

1/2 cup + 1/2 cup sesame seed oil (til ka tael)

100 gms red chilli powder

20 gms asafoetida powder (hing)

10gms powdered mustard seeds

100 gms salt

Method of Preparation

  • Wash amla and dry thoroughly.
  • Heat 1/2 cup oil in a frying pan and sautee amla till golden brown.
  • Heat remaining oil in another pan,remove from heat and add spice powders and salt.
  • Mix well and add amla.Mix again and store in an airtight jar.Use after 3 months.
