Nenthrapazham Ada - Plantain and Rice Dessert in Banana Leaves
Ingredients of Nenthrapazham Ada
Serves: 6
4 ripe plantains
250 gms rice flour
½ medium-sized, fresh coconut, grated
½ cup sugar
4 white cardamoms, powdered
10 banana leaves
1 ½ tbsp oil
Method of Preparation of Nenthrapazham Ada
- Steam plantains for 10 minutes, peel and mash.
- Add rice flour, coconut, sugar and cardamom powder, and knead to make a dough.
- Clean banana leaves with a damp cloth on both sides, dry and pass over a live flame to make them pliable. Cut into 20-cm pieces.
- Wet banana leaves and spread dough over them thinly with your fingers.
- Fold leaves to cover dough and make ada.
- Heat a tava or griddle and spread a little oil evenly over it.
- Place an ada on tava and roast on both sides till leaf turns brown.
- Remove from heat and serve with or without the banana leaf wrapping.
