Though pathiri are prepared in various ways the basic recipe is the one given below.They are usually eaten with meat,chicken or drumstick leaf curry.
1 1/2 cups coconut milk
2 1/2 cups sifted rice flour + extra for dusting (sift through a fine meshed sieve and use only the finest flour)
1/2 tsp salt
Method of Preparation
Place coconut milk in a pan and bring to boil.Mix in rice flour a little at a time.Add salt and keep stirring till it forms a dough.
Cool and pinch off lime-sized balls of dough.Dust with rice flour and roll into thin,10-cm round pathiri.
Heat a tava or griddle and roast pathiri on both sides for about 2-5 minutes,taking care that they do not colour.They should remain white.
Variation:Cheriya Ulliyum Thengayum Chertha Pathiri (Unleavened Rice Bread with Shallots and Coconut ):Prepare pathiri with water instead of coconut milk.Dip 3 sets cooked pathiri in a finely ground paste made with 1/2 fresh coconut,1 shallot and 3/4 cup water.
