Pazha Pradhaman - Ripe Plantain Dessert

Ingredients of Pazha Pradhaman

Serves: 6

Served at feasts.

6 ripe plantains

¾ cup ghee

Syrup made from 700 gms jaggery

6 cups coconut milk (3rd extract)

3 cups coconut milk (2nd extract)

2 cups coconut milk (1st extract)

4 white cardamoms, powdered

Method of Preparation of Pazha Pradhaman

  • Peel plantains, cut into 1-cm pieces and place and place in a pan with 2 ½ cups water. Place pan on heat and boil till it turns red, stirring occasionally.
  • Add ghee, mix well and fry for 5 minutes, stirring constantly.
  • Pour in jaggery syrup, mix well and cook, stirring till it has the consistency of a thick porridge.
  • Stir in third extract of coconut milk. Bring to boil and continue boiling till it thickens slightly, stirring occasionally.
  • Stir in second extract of coconut milk. Bring to boil and continue boiling till it thickens a little more, stirring occasionally.
  • Stir in first extract of coconut milk and cardamom powder, and remove from heat. The consistency should be that of a thin porridge.
  • Serve hot.
