Peel plantains, cut into 1-cm pieces and place and place in a pan with 2 ½ cups water. Place pan on heat and boil till it turns red, stirring occasionally.
Add ghee, mix well and fry for 5 minutes, stirring constantly.
Pour in jaggery syrup, mix well and cook, stirring till it has the consistency of a thick porridge.
Stir in third extract of coconut milk. Bring to boil and continue boiling till it thickens slightly, stirring occasionally.
Stir in second extract of coconut milk. Bring to boil and continue boiling till it thickens a little more, stirring occasionally.
Stir in first extract of coconut milk and cardamom powder, and remove from heat. The consistency should be that of a thin porridge.
