Pinjanathappam - Steamed Egg White Dessert

Ingredients

Serves: 8

A Muslim dish.

1 cup sugar

Whites of 20 eggs

1 1/4 cups plain flour (maida)

8 white cardamoms,powdered

1 tbsp ghee

Method of Preparation

  • Place sugar with 3 1/4 cups water in a pan over moderate heat and stir till sugar dissolves.Bring to boil and boil til syrup reaches the thread stage. (A little syrup poured into a cup of cold water forms a thin thread.)
  • Remove pan from heat and allow syrup to cool.
  • Beat egg whites with sugar syrup,flour,cardamom powder and half the ghee.
  • Coat a round dish with remaining ghee and pour in mixture.Place in an idli utensil or pressure cooker and steam for 20 minutes.
  • Serve as it is or spread muttamala over it.
