Puttu - Steamed Rice with Coconut

Ingredients

Serves:6

Puttu is probably the most common breakfast food in Kerala's roadside teashops.

You will need a puttukutti,which is available in South Indian stores,to prepare this.

2 1/2 cups rice flour

1/2 tsp salt

1/2 medium-sized,fresh coconut,grated

Method of Preparation

  • Mix rice flour,salt,3/4 cup water and a handful of coconut till rice flour is thoroughly soaked and smooth.
  • Put a 3-cm layer of grated coconut at the base of a puttukutti and cover with a 6-cm layer of rice flour.Repeat layering till puttukutti is full.
  • Fit puttukutti onto the metal utensil holding warm water.Raise heat and steam for 10 minutes.
  • Serve with Bengal gram curry,or potato or chicken mapas,and pappadum.
  • Note:Puttu can also be eaten with ripe bananas.Generally,the sweet-sour variety called palayankodan is preferred.
