Sharkkara Chertha Ada Manga - Sweet Mango Preserve

Ingredients of Sharkkara Chertha Ada Manga

Makes: 600 gms

1 kg ripe, slightly sweet mangoes

50 gms salt

Syrup made from 100 gms jaggery

25 gms red chilli powder

10 gms asafoetida powder (hing)

Method of Preparation of Sharkkara Chertha Ada Manga

  • Wash mangoes and dry thoroughly. Cut into 8 pieces each and discard seeds.
  • Mix in salt and keep in the sun for 2 days.
  • Place jaggery syrup in a pan over heat and boil till sticky.
  • Mix in spice powders and add mangoes.
  • Mix well and place pan in the sun, covered with a clean muslin cloth, till jaggery syrup dries. Stir once in a while.
  • Store in an airtight jar and use after 3 days.
