Sharkkara Chertha Ada Manga - Sweet Mango Preserve
Ingredients of Sharkkara Chertha Ada Manga
Makes: 600 gms
1 kg ripe, slightly sweet mangoes
50 gms salt
Syrup made from 100 gms jaggery
25 gms red chilli powder
10 gms asafoetida powder (hing)
Method of Preparation of Sharkkara Chertha Ada Manga
- Wash mangoes and dry thoroughly. Cut into 8 pieces each and discard seeds.
- Mix in salt and keep in the sun for 2 days.
- Place jaggery syrup in a pan over heat and boil till sticky.
- Mix in spice powders and add mangoes.
- Mix well and place pan in the sun, covered with a clean muslin cloth, till jaggery syrup dries. Stir once in a while.
- Store in an airtight jar and use after 3 days.
