Thenga Chertha Pathiri - Unleavened Rice Bread with Coconut

Ingredients of Thenga Chertha Pathiri

Serves: 6

2 ½ cups parboiled rice

½ medium-sized, fresh coconut,grated

4 shallots, chopped

A pinch of cumin seeds

1 tsp salt

3 tbsp ghee

Rice flour for dusting

Method of Preparation of Thenga Chertha Pathiri

  • Wash rice and soak in warm water for 8 hours.
  • Drain rice and grind to a thick dough with coconut, shallots, cumin and ¾ cup water. Mix in salt.
  • Heat a tava or griddle, spread a little ghee on it. Spread a ladle of dough on tava and cook on both sides till golden brown.

    Variation: Ney Pathiri (Unleavened Rice Bread with Ghee) : Pour ½ ladle of dough into hot ghee and deep fry till golden brown.
