Ingredients of Urulakizhangu Kari

Serves: 8

A Christian dish.

2 medium-sized potatoes

2 tbsp oil

1 tsp mustard seeds

1/4 medium-sized,fresh coconnut,chopped into 1-cm pieces

2 shallots,chopped

3-cm piece ginger,chopped

1 stalk curry leaves

1 tsp salt

1 medium-sized onion,sliced

Ground to a fine paste:

2 shallots,chopped

1 clove garlic,chopped

2 tsp red chilli powder

2 tsp coriander powder

4 black peppercorns

3-cm stick cinnamon,broken into pieces

1 clove

A pinch of fennel seeds (badi saunf)

1 tsp turmeric powder

4 tsp water

Method of Preparation of Urulakizhangu Kari

  • Peel potatoes and cut intoo 3-cm cubes.
  • Heat oil in a pan and sprinkle in mustard seeds.When they start sputtering,add coconut,shallots,ginger and curry leaves,and fry,stirring constantly,till coconut turns brown.Stir in salt,spice paste,and 1 1/2 cups water,and bring to boil.
  • Mix in potatoes and onion,cover pan and cook over high heat for about 20 minutes till tender.
  • Break potatoes gently with the black of a ladle to thicken gravy.
  • Variation: Breadfruit can be substituted for potato.
