Varutha Thenga Chammanthi - Browned Coconut Chutney

Ingredients of Varutha Thenga Chammanthi

Makes: 250 gms

½ medium-sized, fresh coconut, grated

6 dry chillies, torn into pieces or green chillies

1 cm piece ginger, chopped

2 shallots, chopped

1 stalk curry leaves

A walnut-sized piece of seedless tamarind or small unripe mango

1 tsp salt

¼ cup water

Method of Preparation of Varutha Thenga Chammanthi

  • Place coconut in a pan over low heat and cook till brown.
  • Mix all ingredients together and grind to a coarse paste.
