Varutha Thenga Chammanthi - Browned Coconut Chutney

Ingredients

Makes: 250 gms

1/2 medium-sized,fresh coconut,grated

6 dry red chillies,torn into pieces or green chillies

1-cm piece ginger,chopped

2 shallots,chopped

1 stalk curry leaves

A walnut-sized piece of seedless tamarind or small unripe mango

1 tsp salt

1/4 cup water

Method of Preparation

  • Place coconut in a pan over low heat and cook till brown.
  • Mix all ingredients together and grind to a coarse paste.
